One thing I love about travelling is not only eating the cuisine but also picking up hot sauces from that country and trying them out at home. There’s so many in the Caribbean that I don’t know about but going to St Lucia really made me want to travel around to other islands and try them all.
For St Lucia, Viking to me seems to be the island’s go-to for hot sauce – they have a hot pepper sauce and a dam hot one. Alternatively there’s also Baron, a brand that’s prominent not only in St Lucia, but also Grenada and Trinidad.
All three are great, no lie. The red pepper sauces are hot and linger a little on your tongue, especially the dam hot one as it’s got more fire to it. I’d say for the latter add smaller doses to your food unless you’re used to sauces such as Econa. The yellow pepper sauce is by far my favourite, and to be honest I think these are the best in the Caribbean along with the one from Bahia Principe, Jamaica which I made into a seafood and pasta dish. The sauce is a little more thicker and with the habanero peppers inside, it’s complimentary to a lot of different dishes.
And speaking of having it with almost everything, there’s a few dishes or light meals that you can have the sauces with:
- Chilli Con Carne
- Curry Chicken
- Jerk Chicken and Rice
- Patties
- Pizza
- Toastie or Wrap
- Yakiudon
