We’re at a time in our life where it’s ok not to make such extravagant dishes at this time. Everyone is feeling low but I believe cooking can really take people’s minds off this pandemic, if only for a little moment. No-one will stave during this lockdown with the bare minimum, I’ll make sure of it. This quarantine life is hard for us all but I’m going to make it a little easier for you guys to forget about the current situation.
So here’s 5 quick and easy meals that you can make in under 30 minutes or less during this lockdown period! And don’t worry, seasoning and spicy options are included!
Essential seasoning and herbs:
Black/White Pepper, Salt, Mixed Herbs, Chilli Powder, Garlic, Onions
Soup
Cliché, eh? But I’m not about to recommend you to go get a canned soup and fill it up with ingredients. Nope! To make a quick, homemade soup all you really need is broth (chicken or vegetable), potatoes and extra vegetables. May I suggest some vegetables could be courgettes, bamboo shoots and carrots to your dish?
Ingredients – Chicken, Vegetable or Vegan Broth, Potatoes, Assorted vegetables of your choice
Extra – Meat or Seafood, Jerk seasoning, Cayenne Pepper
Cooking Time – 30 minutes
Chicken and Rice
A very typical dish that can be changed to your liking as much as you want. The key ingredients are of course chicken and rice but it would be a bit dry without some sauce, no? I’d recommend a table sauce you can use to marinade all over the chicken such as sweet chili, teriyaki or a spicy mayo sauces to complete your meal. Added seasoning is a must to make your chicken and rice more tastier.
Ingredients – Chicken, Rice, Sauce (Spicy Mayo, Sweet Chilli or Teriyaki)
Extra – All Purpose seasoning, Red & Green Peppers, Cajun seasoning
Cooking Time – 20 minutes
Tacos
Burritos work too but I think tacos are just as good to have. I always feel like you can have more fun changing the ingredients around with tacos. You will need tortillas, salsa sauce and your choice of chicken, minced beef or vegetables as an alternative.
Ingredients – Tortillas, Salsa sauce, Chicken or Minced Beef
Extra – Cheese, Sour Cream, Paprika
Cooking Time – 30 minutes
Penne Pasta
A good pasta is always easy to make and you can have so many choices, it doesn’t have to be penne but I find it really quicker to boil and eat. For this time, I believe a bit cheese and creating your own homemade tomato sauce (or ready-made ones like Dolmio are fine) is enough.
Ingredients – Penne, Cheese, Homemade tomato sauce
Extra – Chilli flakes, Basil, Oregano
Cooking Time – 15 – 20 minutes
Stir-fry Noodles
Stir-fry noodles can be cooked in 2-3 minutes especially if they are egg or Singapore noodles. Please also use your choice of meat, seafood and vegetables. My recommendation is prawns or chicken. In addition, or vegetarians, I’d recommend the usual – baby corn, sweet peppers and green beans. You can’t leave out sauce and I believe mixing sriracha with soy sauce would be tasty for your
Ingredients – Egg or Singapore noodles, Meat/Seafood or Vegetables, Sauce (Sriracha & Soy Sauce)
Extra – Additional stir-fry vegetables (sliced carrots, broccoli, spinach), Red chillies, Sesame seeds
Cooking Time – 15 – 20 minutes
