Spices are a part of Turkish culture so it was amazing to go to Istanbul, try some and bring some home to create dishes in the kitchen. Biber means pepper in Turkish which is why I’m referring to this pepper and Maras as Biber for these posts.
Even though it’s labelled Yagli Isot, this pepper has two names – Urfa biber or Isot pepper flakes. It’s an infamous spice that’s a dark maroon colour and gets it’s name from the Urfa region of Turkey. It’s one of those spices that when it hits other ingredients, the pepper flakes take effect and you can subtly taste the change in flavour upon using it.
It’s used for meat and savoury dishes such as kebabs but also brings more flavour to dips, sauces and salads. So far, I’ve used it in my BBQ Spicy Tofu, Chilli Beef Burritos as well as sauces like garlic mayonnaise and spicy ketchup. Maybe in the future, I can try it out in a meatball, roasted vegetable or a kebab dish.
